Gimme Some Oven original recipe
Morgan altered version (Single recipe)
- 2 T Olive Oil
- Whole diced onion (yellow or white)
- 2 cloves of garlic, minced
- 1/2 cup of flour (Bob's Red Mill gluten free 1 to 1 baking flour)
- 4 cups of chicken bone broth (organic, the whole container)
- Rotisserie chicken deboned and cubed
- 1/2 cup Las Palmas mild red enchilada sauce
- 14ish oz can black beans, rinsed and drained
- 14.5 oz can diced tomatoes
- 4 oz green chiles chopped (if you can buy whole and chop yourself it's always better so you avoid the seeds)
- 8 oz cheddar cheese block - grated
- salt to taste (1/2 tsp)
- Top with: chopped green onion and/or cilantro, sour cream, avocado, additional cheese, and tortilla chips
